Ingredients
- 1 kg zucchini
- 1 onion
- salt
- pepper
- cumin seeds
- coriander seeds
- 50 g parsley
- 2 eggs
- 75 g parmesan
Steps

Sauté the zucchini in olive oil with the onion over low heat.

Season generously (salt, pepper, cumin seeds, coriander seeds).

Cover and reduce to evaporate the liquid.

Add a large amount of parsley.

Roughly blend and stir in the eggs beaten together with the grated parmesan.

Pour into a loaf tin and bake in a bain-marie for 1 hour.
