Ingredients

  • 1 kg zucchini
  • 1 onion
  • salt
  • pepper
  • cumin seeds
  • coriander seeds
  • 50 g parsley
  • 2 eggs
  • 75 g parmesan

Steps

  1. Sauté the zucchini in olive oil with the onion over low heat.

  2. Season generously (salt, pepper, cumin seeds, coriander seeds).

  3. Cover and reduce to evaporate the liquid.

  4. Add a large amount of parsley.

  5. Roughly blend and stir in the eggs beaten together with the grated parmesan.

  6. Pour into a loaf tin and bake in a bain-marie for 1 hour.
