Ingredients

  • 4 lemons
  • 175 gr sugar
  • 1 table spoon maïzena
  • 4 eggs
  • 3 egg whites
  • 100 gr sugar
  • 1 tea spoon baking powder

Steps

Dough

  1. Prepare a pâte brisée or sablée and pre- bake it.

Lemon curd

  1. Get the zest and juice of the lemons.

You can also use limes if you like it more sour!

  1. Add the sugar, the maïzena, and heat gently.

  2. Add the eggs pre-beaten.

  3. Put on high heat and pour into the dough when the mixture starts to thicken.

  4. Bake the mixture in the dough until it finishes thickening at 160°C for 10 minutes.

  5. Let cool.

Meringue

  1. Beat the egg whites very dense, add the sugar and the baking powder and finish beating.

  2. Spread on the tart. Put in the oven at 160°C, until the meringue browns.

  3. Let cool.
