Ingredients
- 250 gr wallnuts
- 250 gr sugar
- 100 gr butter
- 1 table spoon crème fraîche
- 1 sachet vanilla sugar
- 4 egg yolks
- 4 egg whites

Dough
- Prepare a pâte brisée or sablée and pre- bake it. It is possible to add an “abricotage” (spreading apricot jam or equivalent) on the dough before adding the nut based mix.
Filling

Blend the wallnuts.

Mix the sugar, the butter melted, the crème fraîche, the vanilla sugar and the egg yolks.

When the mixture is homogeneous, add the egg whites beaten into very firm peaks.

Put in the oven at 160°C for 40 minutes.

When the pie has cooled, glaze it with a coffee icing.
