Tarte aux noix

Ingredients

  • 1 pâte brisée
  • 250 g wallnuts
  • 200 g sugar
  • 100 g butter
  • 1 table spoon crème fraîche
  • 1 sachet vanilla sugar
  • 4 egg yolks
  • 4 egg whites

Steps

Dough

  1. Prepare a pâte brisée and pre-bake it. It is possible to add an “abricotage” (spreading apricot jam or equivalent) on the dough before adding the nut based mix.

Filling

  1. Blend the wallnuts.

  2. Mix the sugar, the butter melted, the crème fraîche, the vanilla sugar and the egg yolks.

  3. When the mixture is homogeneous, add the egg whites beaten into very firm peaks.

  4. Put in the oven at 160°C for 40 minutes.

  5. When the pie has cooled, glaze it with a coffee icing.
